Recipe for Sweet Potato Beef Stir Fry

  • 1lb Ground Beef
  • 10-12oz Sweet Potato Vermicelli Noodles
  • 2 Carrots – Sliced
  • 1 Red Bell Pepper – Sliced
  • 5 Stalks Green Onion – Chopped loosely
  • 1 Cup Chopped Mushrooms
  • 2 Garlic Cloves – Minced
  • 1/2 Tablespoon Salt
  • 1/2 Tablespoon Pepper
  • 2 Tablespoon Hoisin Sauce
  • 2 Tablespoon Oyster Sauce
  • 1 Tablespoon Olive Oil

Directions:

In medium pot, boil Sweet Potato Vermicelli Noodles in boiling water until soft and clear (10-15 minutes)

In large pan or wok, stir fry minced garlic and ground beef in olive oil until medium brown. Add pinch of salt and pepper. Add Carrots and Red Bell Pepper. Cook for 3 minutes. Add mushrooms and green onion. Stir and cook until beef is well done. Turn off heat. Add noodles to mixture and stir. Add remaining salt and pepper. Mix evenly using tongs. Add Hoisin and Oyster sauce and mix evenly.

Garnish with cilantro and serve with rice! Enjoy!
